Commercial Foods Production is a three-year program that provides students with education in skills and knowledge so they will be able to perform in Foods Services and the Baking industries.

Students taking the course will learn all the necessary skills and knowledge of food sanitation, safety, handling, and cooking. They will interpret menus and recipes to gain higher work standards in their field. Deadlines will be maintained and they will experience a process of evaluating their own work.

Students will participate in an on-going Employee’s Meal Program. They will assemble a personal recipe file and assist the school district with special culinary functions. Each student will be able to write a Technical Paper the first year, a Research Paper the second year and perform a hands-on Graduation Project their third (Senior) year.

In addition to practical training and related classwork, students at CMCTSD are encouraged to participate in the activities of the SkillsUSA. SkillsUSA is a national organization of high school and college students and professional members who are enrolled in training programs in technical, skilled, and service occupations. SkillsUSA programs help to establish industry standards for job skill training in the classroom.

Year 1, 2, 3 This program will provide students with entry-level skills in the preparation and serving of foods in the hospitality industry. Students will learn the operations that take place in the kitchen such as safety, sanitation (personal hygiene, food borne illness, equipment cleanliness, dishwashing) knife skills, equipment usage, cold food production, hot food production, portion control and cost management. It will provide students with entry-level skill in the following job titles according to the Guide to Labor Demand Occupations in New Jersey.
